Trick or Treat Popcorn

Time 15 mins
Makes 2 large pans
Per portion: Calories 149
Fat 6g of which 1g is saturated
Suitable for vegetarians

Popcorn 200g (7oz)
Olive oil 4 tbsp
Salt pinch
Chilli powder 1 tsp
Golden caster sugar 1-2 tbsp

1 Cook two panfuls of popcorn one after the other: For the first batch place 100g (3½oz) of popcorn, 2 tablespoons of oil, salt and chilli powder into a pan and stir thoroughly. Cover pan with a tight-fitting lid and heat gently. Shake occasionally to prevent burning, and continue heating until popping subsides.

2 Remove from heat and leave to stand until no more popping can be heard. Stir thoroughly, taste and add a little more chilli powder if necessary.

3 Repeat with remaining popcorn (without salt or chilli) but add sugar at the end of the cooking time when leaving pan to stand. Leave to cool slightly before popping into bowls and serving to your trick or treaters!

A Clever Halloween Recipe.

Having deprived my children for the past six years (a goulish excuse to beg for Enumber-laden sweets!), I have finally succumbed to Halloween.

My fellow villagers know which residents welcome trick or treaters and, as the children all go together in one group, it’s not an evening-long intrusion. So, I have decided to allow my little ones to dress up (in cute non gory costumes of course!) and participate.

We have stocked up on goodies and I
plan to make some of this wicked popcorn –
which will give the little spooks either a
trick (one is spiced with chilli) or a treat!

I think the youngsters will love this Russian-roulette chance to giggle at their friends who choose chilli.

Don’t worry though, we’ll have glasses of water at the ready!

Recipes for a Happy Halloween

Stroll around any supermarket and you will be literally attacked by Halloween merchandise – it’s everywhere!

I’m not quite sure how I feel about the whole Halloween thing – especially encouraging our children to dress up in hellish costumers and knock on strangers’ doors begging for sweets. However, it can be a great excuse to get crafting.

The most obvious thing to do, of course, is pumpkin carving.  A beautifully carved pumpkin can be really quite lovely.  I don’t know if we have the talent to produce something like this but we will certainly attempt a simple version.

And in the 2014 Dairy Diary, there’s a fab Pumpkin & Ginger Risotto recipe for using up leftover pumpkin flesh. Ideal for a romantic meal for two after the children are safely tucked up in bed!

And for the little ones to make? How about this fabulous recipe for Halloween Cake Pops? They are simple to make and look so pretty (although our talented food stylist Sara, may be a little more artistic than my children!)

The History of Halloween, Dairy Diary-Style

I’m often asked to find recipes from previous editions of the Dairy Diary, so I spend quite a lot of time flicking through old copies.

As the Dairy Diary is now in its 30th year, there are quite a few to peruse!

It’s always interesting to see how photography and crockery styles have changed over the years. Some of the styling in the eighties and early nineties makes me chuckle.

For a number of years, there was a fashion for including props which were supposed to relate to the recipe in some way. My favourite one is the recipe for Smoked Ham Cornets, which is pictured with a brass cornet!  Hee hee.

The 1993 edition is a fantastic book for these, though how Lancashire Fruit Braid relates to an embroidery hoop or Savoury Potato Skins relates to a Cluedo board I am not sure!

Halloween Pumpkin Gratin

Perfect for a chilly Halloween celebration.

Halloween Pumpkin Gratin from the 2012 Dairy DiaryServes 4
Time 50 mins
Cals 334 per portion
Fat 24g of which 9.5g is saturated
Suitable for vegetarians
Suitable for freezing

Pumpkin 1.8kg (4lb), peeled and deseeded
Parmesan cheese 50g (2oz), grated
Fresh breadcrumbs 50g (2oz)
Pecan nuts 50g (2oz), roughly chopped
Chopped thyme leaves 2 tbsp
Butter 50g (2oz), melted

1 Preheat oven to 200°C/400°F/Gas 6. Cut pumpkin into 2.5cm (1in) thick wedges. Place in a lightly buttered ovenproof dish. Season well with salt and freshly ground black pepper.

2 Mix together Parmesan cheese, breadcrumbs, pecans, thyme and seasoning in a bowl.

3 Sprinkle evenly over pumpkin. Then drizzle over melted butter.

4 Bake in oven for 30–40 minutes, until pumpkin is tender and topping is golden. Serve immediately.

Tip Rather than Parmesan cheese, crumble over some strong blue cheese.
