Time 1–11/4 hrs

Ingredients

Butter 175g (6oz), softened

Golden caster sugar 175g (6oz)

Lemon 1, finely grated zest and juice

Eggs 3 large

Self-raising flour 225g (8oz)

Baking powder 1 tsp

Fondant icing sugar 225g (8oz)

Jelly oranges and lemons, sliced to decorate

 

Instructions

1 Preheat oven to 180ºC/Gas 4. Beat together butter, sugar, lemon zest, 1 tbsp juice, eggs, flour and baking powder using an electric mixer. Spoon into an 18cm (7in) square cake tin, greased and lined, and bake for 35-45 minutes or until firm. Leave to cool in tin for 10 minutes before turning out onto a wire rack.

2 Sift icing sugar into a bowl and gradually beat in enough lemon juice (and water, if necessary) to make a smooth thick icing. Spoon on top of cake and spread evenly with a knife.

When I commission a home economist to write recipes for the Dairy Diary they first supply me with a recipe ideas list. And oh what a treat!

This is one of my favourite elements of my job – choosing a final recipe selection from this list.

It’s never a good idea to read
through it before lunch though,
as it makes me ravenous.

I plan the recipes according to the season and to reflect any special events. That is why St George’s Day Bread Pudding caught my eye. I thought it would be perfect for this week in 2014.

However, I also felt a little baffled by its title. How was a bread pud related to St George’s Day? Obviously bread pudding is a very traditional recipe and it does originate here but that was the only link to St George I could discern. That is until I saw the pic (above).

How clever is that? It looks like lots of little St George’s Cross flags. And you won’t believe just how divine it tastes too. It’s actually ended up more like a bread and butter pudding, but who cares about that…..just enjoy it. I have and I will be enjoying it again this week to celebrate St George’s Day.

I LOVE Valentine’s Day, I know I know, what a hopeless romantic. Many people dismiss it as commercial and an excuse for the card companies and other retailers to make money. I have to say I’m a little less sceptical (although I am sure it is a lucrative industry none the less).

I think it’s fantastic that we have
a day to remind us to cherish our
other halves and take time out to
make them feel special.

We get so swept along with the mundanity and busyness of everyday life that most of us (I am sure that there are those who are romantic every day….not me!) forget or simply don’t have time to spoil our loved-ones.

It doesn’t need to be an expensive affair – you don’t even need to go out. Just have a think about a few special things that you can do to make your special person feel loved:

  • Leave secret notes – choose places where they will be discovered throughout the day; in pockets, the car, cupboards, under the duvet etc.
  • Make a special breakfast tray – croissants, preserves, a pot of tea or coffee.
  • Send a few kisses by text several times during the day.
  • Create your own card with photographs of you both together during happy times. Print them out and make yourself or order online from Snapfish or similar.
  • Lay a very special table for dinner (and if you have children, eat after they have gone to bed). Go to town, with a tablecloth, your best crockery and glasses, candles and flowers.
  • Cook a delicious dinner, see below for some recipe ideas.

Favourite Pancake Recipes

For some reason I only ever cook pancakes on Shrove Tuesday. Why is that?

It’s as though someone has passed a law that states they only allowed on one day of the year! I love pancakes too; savoury and sweet, though I’ve not quite mastered a decent savoury pancake yet. I think the French are brilliant at these. I can still vividly remember the crêpe with cream and egg cooked for me on my French exchange as a fourteen year-old (which is more than a couple of years’ ago now, no comments on that please!)

So what’s your favourite pancake recipe?
I adore good old simple sugar and lemon
but I do like to cook something different too.

On the recommendation of my friend Gudi who tested this for me when we were putting together Take a Box of Eggs I shall be cooking Chicken, Broccoli & Cheese Pancake Bake followed by Apple Pancakes.

British Yorkshire Pudding Day

Dairy Diary has such a loyal following and heritage that I think it can easily be called a British classic. There’s nothing else like it after all! Another British classic is, of course, the Yorkshire and Sunday is British Yorkshire Pudding day.

It may be a little bit naughty, but proper homemade Yorkshires are one of my all-time favourites. Particularly the huge ones filled with something delicious and old fashioned like beef stew or braised sausages with gravy.

The first of our modern Dairy Cookbooks
had a giant Yorkshire pudding on its cover.

I am sure that contributed to its success (as well as being a fantastic cookbook of course.)

Yorkshire Pudding is one of the most iconic of British dishes, famous not only in the UK but also abroad. It is also a recipe that has stood the test of time, with its present form boasting a history dating back to the 1700s and its predecessor, Batter Pudding, having been eaten perhaps centuries before that throughout Great Britain. How do I find an old Dairy Diary recipe?

This is probably the question I hear most from our customers.

There is usually an elaborate story attached to the question as people seem to be mortified that their precious Dairy Diaries have somehow gone astray.

Even though I live and breathe Dairy Diary, I confess that I don’t keep them all – I just cut out the recipes and keep them in ‘Mummy’s Recipe Folder’ – so I wouldn’t be at all offended if people admit that they throw away their old copies!

To find Dairy Diary and Dairy Cookbook recipes search the Dairy Diary recipe library  where you will find hundreds of fabulous recipes at your fingertips and don’t forget to subscribe to the Dairy Diary Chat blog for weekly recipes (some of which are from previous diaries).

time and again. In fact, they have been so
