Fat Rascals

Fat Rascals recipeThere is lots of history behind these biscuits, and they may originally have been cooked on open turf or peat fires on Whitby Moor. 

Preparation time – 10 minutes
Cooking time – 18 minutes
Calories per biscuit – 200 Kcal
Fat per biscuit – 9g of which saturated – 5.8g
Makes – 10
Suitable for vegetarians

Plain flour 250g (9oz)
Salt pinch
Butter 110g (4oz)
Currants 50g (2oz)
Light muscovado sugar 2 tbsp
Milk 3–4 tbsp
Caster sugar for sprinkling

1 Preheat the oven to 200°C/400°F/Gas 6. Butter a baking sheet.

2 Sift the flour into a bowl and add the salt. Rub in the butter, then stir in the currants and sugar. Add the milk and bind to form a dough. Knead the dough lightly on a floured surface and then roll it out to about 1cm (1⁄2in) thick.

3 Use a 5cm (2in) cutter to cut out rounds and place them on the baking sheet. Re-roll and cut trimmings as necessary. Sprinkle caster sugar over the tops. Cook in the centre of the oven for 15–18 minutes. These will keep in an airtight container for up to three days.

Ripe Tart

Ripe tart.The name of this dish comes from the village of Ripe in Sussex, where a pie feast celebrated the cherry harvest.

Preparation time – 25 minutes
Cooking time – 1 hour 15 minutes
Calories per portion – 330 Kcal
Fat per portion – 16g of which saturated – 6g
Serves – 8
Suitable for vegetarians

Plain flour 175g (6oz)
Salt pinch
Cornflour 25g (1oz)
Icing sugar 110g (4oz) plus 2 tsp and a little for decorating
Butter 75g (3oz)
Eggs 2 plus 1 yolk
Cherries 450g (1lb), stoned
Ground almonds 75g (3oz)
Almond essence few drops
Flaked almonds 25g (1oz)

1 Sift the flour, salt, cornflour and 2 tsp of the icing sugar into a bowl. Rub in the butter until it resembles fine breadcrumbs.

2 Add the egg yolk and a little water to bind together. Knead lightly on a floured surface and roll out. Place a 23cm (9in) diameter loose-bottomed fluted flan ring on a baking tray and line with the pastry. Preheat the oven to 200°C/400°F/Gas 6 and chill the flan case while the oven warms up.

3 Bake the pastry case blind for 15 minutes (see Cook’s tip on page 160). Remove baking beans and cook for 5 minutes more. Turn down the oven to 170°C/325°F/Gas 3.

4 Arrange the cherries in the flan case. Mix the icing sugar, eggs, almonds and essence and pour over. Bake in the oven for 50–60 minutes, until the top is firm and golden. Halfway through cooking, sprinkle flaked almonds over the top. Serve hot or cold dusted with sifted icing sugar and with pouring cream.

Try this flan with plums or apricots, for a change.

Cherry Cupcakes

Cherry Cupcakes recipeA favourite with children of all ages!

Makes 12 cakes
Time 30 mins
Calories 265 per cake
Fat 14g of which 8.5g is saturated
Suitable for vegetarians

Butter 175g (6oz)
Caster sugar 110g (4oz)
Eggs 2, beaten
Self-raising flour 110g (4oz)
Glacé cherries 50g (2oz), chopped
Icing sugar 110g (4oz)
White chocolate buttons and halved glacé cherries to decorate

1 Preheat oven to 190°C/375°F/Gas 5. Spread out 12 paper cases on baking sheets, or put them into patty tins.

2 Cream 110g (4oz) butter and all caster sugar together until pale and fluffy. Gradually beat in eggs, beating well after each addition. Fold in flour, then chopped cherries.

3 Fill paper cases half full and bake for 15–20 minutes, until golden brown. Transfer to a wire rack to cool.

4 Beat remaining butter with icing sugar for butter icing and spread over top of cooled cakes. 5 Decorate with white chocolate buttons and glacé cherries.

Baked Cream Cheesecake

Baked Cream Cheesecake recipe

Baked cheesecake is easy to make and absolutely delicious

Serves 10
Preparation 30 mins plus chilling
Cooking 1¼ hrs
Per portion 351 kcals, 25g fat (14g saturated)

50g (2oz) butter, melted
150g (5oz) digestive biscuits, crushed
¼ tsp ground cinnamon
500g (1lb 2oz) full fat soft cheese
125g (41/2oz) caster sugar
3 eggs, beaten
Grated rind of 1 lemon
2 tbsp lemon juice
1½ tsp vanilla extract
150ml (1/4 pint) soured cream
Grated lemon and lime rind to decorate

1 Mix together melted butter, biscuits and cinnamon. Press into base of a greased loose-bottomed 20cm (8in) cake tin.

2 Cook at 180°C (350°F) Mark 4 for 10 minutes.

3 Beat together soft cheese and 110g (4oz) caster sugar, then gradually beat in eggs. Stir in lemon rind, lemon juice and vanilla extract.

4 Pour into cake tin and bake for 1 hour or until centre is firm to touch.

5 Remove from oven and allow cheesecake to cool.

6 Mix together remaining sugar and soured cream. Spread soured cream over cheesecake.

7 Remove from tin and chill until ready to serve. Decorate with lemon and lime rind.

Apricot cookies recipe

These delicious cookies are perfect for summer picnics

Butter 175g (6oz)
Caster sugar 110g (4oz)
Soft cheese 175g (6oz)
Self-raising flour 225g (8oz)
Ground almonds 75g (3oz)
Ready-to-eat dried apricots 75g (3oz), chopped
Fudge pieces 75g (3oz), chopped if necessary

1 Preheat oven to 200°C/400°F/Gas 6. Line baking sheets with non-stick baking paper.

2 Put butter, sugar, cheese, fl our and almonds into a bowl and beat together. Stir in apricots and fudge.

3 Drop spoonfuls of mixture onto baking sheets and press down lightly with a fork.

4 Bake for 10 minutes. Leave for 2 minutes on baking sheets, then lift off and cool on a wire rack.

Simnel cake

One of the oldest Christian festivals, Easter marks Christ’s resurrection from the dead. Simnel cake has at some point been adopted as a traditional Easter cake.

The 11 marzipan balls on the top represent the apostles, minus the treacherous Judas.

Preparation time – 30 minutes
Cooking time – 2¼ hours
Calories per slice – 722 Kcal
Fat per slice – 30g
of which saturated – 13.2g
Makes – 11 slices
Suitable for vegetarians

Butter 250g (9oz), softened
Light muscovado sugar 250g (9oz)
Eggs 4
Plain flour 300g (11oz)
Baking powder 1 tsp
Ground mixed spice 2 tsp
Ground almonds 50g (2oz)
Luxury dried mixed fruit 500g (1lb 2oz)
Lemon 1, finely grated zest and 2 tbsp juice
White marzipan 500g (1lb 2oz)
Apricot glaze or sieved apricot jam 2 tbsp

1 Preheat the oven to 150°C/300°F/Gas 2 and line a 20cm (8in) cake tin with baking parchment.

2 Cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, adding a spoonful of the flour along with each egg. Sift in the remaining flour, baking powder and spice and fold the almonds, dried fruit and lemon zest and juice into the mixture. Spoon half into the cake tin and smooth the surface level.

3 Roll out one third of the marzipan until it’s a circle, just smaller than the cake tin, and lay it on top of the mixture in the tin. Spoon the remaining mixture over the top and level the surface.

4 Bake the cake in the centre of the oven for 2–2¼ hours, or until a skewer comes out clean after being inserted into the cake. Cover with a sheet of baking parchment if it starts to brown. When cooked, remove the cake from the oven and leave to cool.

5 Remove the cake from the tin and peel away the lining paper. Spread the apricot glaze or jam over the top. Roll out half of the remaining marzipan to fit the top of the cake. Place it on the cake and smooth down, taking care not to trap any air pockets underneath. Pinch around the edges.

6 Divide the remaining marzipan into 11 pieces and roll each into a ball. Brush a little apricot glaze or jam onto the base of each and evenly space around the top of the cake. Place under a hot grill to brown the marzipan lightly. Remove from the grill and leave to cool before serving.

Cook’s tips
• The cake will keep in an airtight container for up to a week.
• If you have a choice of marzipan, choose white marzipan, which has a more natural flavour than golden marzipan.
