Bake a Mothering Sunday Cake

I was a very lucky child – I had a magical and happy upbringing and I owe a lot to my mum.

I had her firmly in mind when I wrote this Peanut Butter & Popcorn Layer Cake recipe, which has already proved to be a big hit!

This cake looks really impressive but is very easy to make and decorate – ideal for Mother’s Day, which is on Sunday. If you like, the sponge cakes can be made the day before.

Uber-decadent and extremely delicious, this recipe has already been shared many many times on social media.

Enjoy it all you mums out there – you deserve it – it’s an incredibly challenging and important job that you do!

Recipe of the Week: Watercress Soup

From our iconic Dairy Book of Home Cookery, this recipe reminds me of childhood; wading through the local stream with my grandad to collect handfuls of fresh watercress from the icy waters.

I’m not sure if there are many places that you can still find wild watercress, but your local greengrocer or supermarket should certainly stock it. And it’s a great source of vitamin A, C and iron, so tuck in.

 

Watercress Soup

This soup is simple, peppery, creamy and lovely – just add fresh crusty bread!
