Pan-Fried Pork with Apple Slaw

It’s estimated that there are over 2½ thousand varieties of apple in the UK, and 7,000 worldwide!

 

My own Grandad, in fact, created his own variety of apple, named RuthLyn after his two daughters. I wonder if the apple tree is still there? I hope so.

Apples were introduced to Britain by the Romans, who first discovered them growing in Syria.

The Romans were integral in spreading the fruit worldwide, using the Silk Road as a means of transport from East to West.

The popularity of cultivating apples grew in Victorian times, with the creation of many new varieties. I’m a huge fan of the Cox apple, though of course Bramleys make a great crumble. What’s your favourite?

Great kitchen gadgets make cooking a lot easier

Staying with the kitchen theme, here I share with you six tips that I find really useful


If there’s something that you use a lot and then find it is in the dishwasher mid-cycle, buy two! I’ve invested just a few pounds on an extra pair of scissors and another bread knife.


When slicing/chopping salad ingredients, use a small knife, it makes chopping finely much easier.


Keep your knives sharp!


Use ready-made cake tin liners – it may be a little lazy but saves so much time.


Store leftovers in Pyrex-type dishes that are suitable for the freezer and for the oven, so you don’t need to wash extra containers.


For fresh meat/fish, stack in the fridge by use-by date so that you use it in the necessary order. And freeze anything with short dates, if you don’t think that you’ll cook it within the coming couple of days (just check on the label that it’s not been previously frozen).

Recipe of the Week: Frying Pan Clafoutis

Frying Pan Clafoutis

Clafoutis is a baked French dessert

 

It is a speciality of the Limousin region. The name is said to come from the Occitan dialect word claufir, meaning to cover or fill.

Fruit, traditionally cherries, is arranged in a buttered dish and covered with a thick batter and cooked until only just set.

Our recipe – from A Zest for Life – uses autumnal fruit instead of cherries and adds a cheeky dash of Calvados. There are more delicious autumnal recipes in this month’s recipe collection.

A sneak peek…

In March we were due to move into a new office, but instead, we dumped our boxes of books and dashed home to work from our spare bedrooms.

We’ve been busy over the last month, planning, unpacking and putting together flatpack shelving and now, at last, we have finally been able to move into our lovely new office space.

It’s very apt for Dairy Diary – a converted cow barn in the Cheshire countryside. There’s an abundance of flower baskets and a central courtyard where we hope to be able to enjoy the odd alfresco lunch (though we may need to wait until next year for that now!)

As the office is painted white, we had a blank canvas for our colour scheme.
