Prior to my time at Dairy Diary (a very long time ago!) I thought of ice cream making as some sort of magical alchemy; something unattainable in an ordinary kitchen.

But actually, it’s not that tricky at all, in fact, it’s pretty simple, rewarding, and also delicious!

Let me show you just how simple it really is…

After what has felt like a never-ending winter with arctic temperatures, we are beginning to see some gorgeous weather!

When the sun comes out my attention soon turns to whipping up delicious light and healthy meals; to provide a little inspiration we have put together a compilation of 5 fab suppers under 500 calories.

Perfect for warmer evenings where you could dine out on the patio – you may need a blanket as the sun goes down though!

One of my favourite cookbooks is Quick After-Work, we reach for this collection of tasty recipes quite often when meal planning, as all recipes can be on the table in under 30 minutes!

Of course, I had to include some of my family’s best-loved dishes from this book.

I much prefer making dips and sauces from scratch, especially houmous as I can prepare it exactly to my taste.

Feel free to tweak this recipe slightly; however, I know you will love it as much as we do, just how it is.

A Zest for Life has some great low in calorie puds, such as the Strawberry Tarts on page 166 which are only 106 kcals each.

The last meal in our collection of suppers under 500 calories, and it had to be packed with Asian flavours!

This could be made with strips of chicken instead of steak and you could also swap out the cashews for roasted peanuts for a slightly different crunch.

Dairy Diary Cover Research – Can you help?

It is that time of year again, where we ask our wonderful fans for their help in choosing the next Dairy Diary cover

This time, we have narrowed down the choices to four gorgeous designs; taking into account future trends and previous customer comments, whilst making sure the images convey uplifting feelings!

Each member of the Dairy Diary team went away to research designs they thought fit the brief perfectly – consisting of these keywords, ‘light, bright, nature, uplifting, colourful’. Deciding on our top six favourites was incredibly hard as there was lots of beautiful imagery. The most common choices are now being put forward to you in order to see which will become the next cover design!

As a team, we are so pleased with the remaining four 2023 diary cover contenders, which are just lovely, it seems impossible to pick just one favourite!

Hopefully, you love them as much as we enjoyed finding them.

Easter Lemon & White Chocolate Slices

ANY excuse to get me in the kitchen baking, and as you can imagine I have been waiting for Easter to come around this year so that I can make the perfect Easter bake – Easter Lemon & White Chocolate Slices from the 2021 Dairy Diary – delicious.

I first fell in love with this recipe when we were on location at the photography shoot – lemon curd, white chocolate, shortbread and coconut all in a cheesecake… what’s not to like?!

I think I almost ate the whole lot as Emily
isn’t a huge fan of cheesecake… madness!

It’s not often we show the ‘behind the scenes’ of what we do at Dairy Diary, to be honest we often forget to take a quick snap of what’s going on due to how busy we are year-round (we’re not complaining, thank you for keeping us busy!)

Here is a photograph, mid-shoot at the wonderful Steve Lee’s studio in London, we were so disappointed not to be able to visit last year, though our waistlines certainly weren’t too sad about it.

Hopefully, we can visit again soon and make the most of all the delicious food cooked for us very soon for the 2023 diary photography!

Even if the art of crochet is completely new to you, it is so fun and rewarding once you have completed a fabulous set of bunny ears (more on that later) or even seeing a huge blanket-project starting to take shape.
